Koval Barreled Dry Gin takes Chicago distillery Koval's dry gin, made with 13 woodland spices and botanicals including juniper, rosehip, angelica root, coriander and grains of paradise, and rests it in Koval's own whiskey barrels. It is bottled at 47% ABV (94 proof). Koval was founded in 2008 as Chicago's first distillery since the mid-1800s and is known for its organic, grain-to-bottle whiskeys.
The barrel time layers oak, vanilla and a touch of whiskey depth over the crisp rosehip-and-juniper profile of the unaged gin, which Difford's Guide describes as unusual for its overripe-banana juniper, cracked black pepper, coriander and distinctive lavender notes. The result is a gin that behaves like a light whiskey in stirred drinks: try it in an Old Fashioned, a Martinez or a barrel-aged Negroni, or sip it neat as a bridge between gin and bourbon.
