Description: Our heirloom varietals of wheat, barley, and rye are grown by two Colorado family farms. The grains are carefully prepared using a labor-intensive technique that brings out their individual characters, and open-air sour mash adds depth and complexity. Aged for three years in 53-gallon charred oak barrels and influenced by the high-altitude climate, the resulting bourbon is truly unique. The aroma is of orange blossoms, black tea, honey, and dusty pepper. The flavors are of Pekoe tea, orange peel, cinnamon, vanilla custard, and hints of sweet tobacco and spice. The finish is rich and dry. The mash bill is 60% corn, 20% heirloom wheat, 10% heirloom rye, and 10% heirloom malted barley. The whiskey is aged for 3+ years in new 53 gallon charred oak barrels, with an alcohol content of 47.5%.
