Laya Reposado Tequila
Laya is made at Tequila Las Americas, NOM 1480, a family-owned distillery in Amatitán, in Jalisco's Tequila Valley. The agave is 100% blue Weber from a single estate in the Valley, and the tequila is certified organic and kosher. The piñas are cooked in brick ovens, crushed on a roller mill, fermented in open-air stainless steel tanks, and distilled twice in a stainless steel pot still with a copper coil, using deep well water. For the Reposado, that same organic Valley tequila is rested in American white oak barrels before bottling at 40% ABV (80 proof). Drinkers on Tequila Matchmaker report citrus, vanilla, oak and mineral notes on the nose alongside grass and herbs, then cooked agave, fruit and citrus on the palate, with one noting the strong grassy, herbaceous character comes through even after barrel time, and another recommending it for a tequila Old Fashioned.
