Laya Silver Tequila
Laya is made at Tequila Las Americas, NOM 1480, a family-owned distillery in Amatitán, in Jalisco's Tequila Valley. The agave is 100% blue Weber from a single estate in the Valley, and the tequila is certified organic and kosher. The piñas are cooked in brick ovens, crushed on a roller mill, fermented in open-air stainless steel tanks, and distilled twice in a stainless steel pot still with a copper coil, using deep well water. The Silver is the unaged expression, bottled at 40% ABV (80 proof). Amatitán sits in the lowlands near the town of Tequila, the region whose agave is known for a more herbal, earthy, peppery character than the sweeter, fruitier Highlands. Drinkers logging it on Tequila Matchmaker point to a strong grassy, herbaceous profile with bright acidity, citrus and a touch of fruity sweetness, along with mineral notes and a medium-to-long finish.
