Description: Long Pond employs a set of five Vendome and John Dore alembics for crafting their rum. Among these, four possess a capacity of 3,500 gallons each, while one accommodates 1,479 gallons. Although the distillery also possesses a Blairs Coffey still, it is no longer operational.
The distinctive Long Pond STCE label signifies a notable ester concentration, ranging from 550 to 700 g/hlpa. This label, bearing the initials of "Simon Thompson Cambridge Estate," originates from the now-defunct Cambridge Estate and continues to be produced at the Long Pond distillery. This particular rum is matured for a span of fifteen years within ex-Bourbon casks, benefiting from the tropical climate of the distillery. Bottled in its purest form, straight from the cask, without any dilution, additives, sugar, or artificial components.
Upon tasting, one can expect a well-developed profile marked by intense flavors of ripe banana, toffee, walnuts, and pine resin. The palate offers a robust and structured experience, culminating in a remarkably enduring finish that lingers for days.
