Los Javis Cerrudo Joven Mezcal
Los Javis is a family mezcal house in Santiago Matatlán, Oaxaca, the town known as the world capital of mezcal. The family palenque was established there in 1979, and maestro mezcalero Javier Mateo founded the Los Javis brand with his wife in 2003, carrying on a three-generation tradition. It is a fully vertical operation: the family grows its own agave and makes everything at its own palenque, and it has also produced mezcal for other brands, including Derrumbes and Ilegal. The Cerrudo (also spelled sierrudo) is a small-batch joven from a lesser-known Agave americana variety. It is roasted in an underground pit oven, crushed with a horse-drawn tahona, fermented naturally with open-air yeasts, and double distilled in copper pot stills, then bottled unaged at around 47% ABV in hand-numbered batches; one batch from 2015 ran to just 120 bottles. The higher proof and rare agave make this a bottle for drinkers who already know espadín and want to taste how a different maguey changes the same family's process. Pour it neat in a copita at room temperature and let it open up.
