Los Javis Tepeztate Joven Mezcal
Los Javis is a family mezcal house in Santiago Matatlán, Oaxaca, the town known as the world capital of mezcal. The family palenque was established there in 1979, and maestro mezcalero Javier Mateo founded the Los Javis brand with his wife in 2003, carrying on a three-generation tradition. It is a fully vertical operation: the family grows its own agave and makes everything at its own palenque, and it has also produced mezcal for other brands, including Derrumbes and Ilegal. The Tepeztate Joven is made from Agave marmorata, a wild maguey that grows on rocky hillsides and is among the slowest-maturing agaves used for mezcal. The piñas are roasted in an underground pit oven, crushed with a horse-drawn tahona, fermented naturally with open-air yeasts, and double distilled in copper pot stills, then bottled unaged at around 47% ABV in hand-numbered batches. Tepeztate is prized by mezcal drinkers for its distinctly green, vegetal, and floral character, which comes through clearly in an unaged bottling. This is a sipping mezcal: pour it neat in a copita, take small sips, and let it breathe between them.
