Low Gap is the whiskey label of the American Craft Whiskey Distillery in Mendocino County, California, which works out of the historic Germain-Robin facility near Ukiah, where the brandy side of the business earned its reputation distilling on an antique French cognac still. That same style of still is used for Low Gap: the 4 Year Wheat Whiskey is made from 100% Bavarian hard wheat, double distilled on site, and aged four to five years, with this release drawing on spirit distilled in 2010 and 2011. The maturation is unusually varied for an American whiskey, using a selection of new and used bourbon barrels along with used cognac barrels and used port barrels, and it is bottled at 45.5% ABV (91 proof). Published tasting notes describe a nose of banana, pie crust, lemon candy, baking spice, coffee, cocoa, and a little tropical fruit leather, a palate that adds caramel and brittle, and a long finish of candied citrus, coffee, and cocoa. Wheat gives a softer, breadier spirit than corn or rye, and the cognac-still approach keeps it fruity and dense, which makes this one of the more distinctive whiskeys made on the West Coast.
