Luzhou Laojiao San Ren Xuan Baijiu 1L
Luzhou Laojiao is one of the great names in Chinese baijiu, based in the city of Luzhou in Sichuan province, and its fermentation cellars date to 1573 in the Ming dynasty, making it the oldest continuously producing baijiu distillery in the world. Those cellars are on China's national intangible cultural heritage list, and the house's flagship, Guojiao 1573, is named for the year they were dug. San Ren Xuan is a bottling from the same producer, offered here in a one-liter format. Luzhou Laojiao specializes in nongxiang, or strong-aroma, baijiu. The grain mash is fermented in old cellar pits whose walls are coated with a distinctive clay, and those living mud pits are what give the spirit its aroma and palate; the older the pit, the more character it has built up over decades of continuous use. Some of the company's pits were expanded in the 1950s under the supervision of three 17th-generation inheritors of the traditional brewing technique, Li Youcheng, Zhao Zicheng and Zhang Fucheng, and production draws on mineral-rich Yangtze River water. Serve it the traditional way, in small glasses at room temperature alongside a shared meal.
