Levantine Gin is what a whisky distillery makes when it decides to make gin. M&H — Milk & Honey, Israel's first and largest single malt distillery, in south Tel Aviv — starts this the same way it starts its award-winning single malts: 100% malted barley, mashed in-house and pot distilled. That base is the first thing that sets it apart; where nearly every gin sits on neutral grain spirit, this one carries the earthy, faintly nutty weight of malt underneath, closer in spirit to a genever than a London Dry. The second thing is the market. The botanicals are hand-sourced from Levinsky Market, Tel Aviv's beloved spice and aromatics bazaar, and the bill reads like the Levant itself: za'atar (Origanum syriacum, the wild hyssop at the heart of the spice blend), lemon peel, orange, chamomile, lemon verbena, cinnamon, and black pepper alongside the juniper. The botanicals rest in the still 48 hours before a third distillation in a 250-liter pot, bottled non-chill filtered at 46% ABV, Star-K kosher certified. Expect resinous juniper, cinnamon, citrus, and camphorous herbs on the nose with a hint of malt, opening into sweet lemon zest, a bold juniper heart, oregano-like za'atar, and warming spice, with a silky, slightly oily texture and a long, lemony finish. Reviewers split: Master of Malt called it terrific, The Gin Is In praised the clean barley distilling while finding the herbs and citrus at odds, and Drinkhacker found it too savory.
