Maison Gautier Cognac
Maison Gautier XO comes from one of the oldest houses in Cognac, officially founded in 1755 and settled since 1762 in Aigre, a small town in the Charente. The house is now part of the Marie Brizard Wine & Spirits group, but its signature is still the place where the spirit ages: century-old cellars in a former water mill built over the Osme river, where the natural humidity sits around 75 to 80 percent. In damp cellars like these, the spirit loses more alcohol than water as it breathes through the wood, so it grows rounder and softer rather than drier and sharper over long aging. Like all cognac, it starts as wine from Ugni Blanc grapes, double distilled in traditional Charentais copper stills, then aged in French oak; Gautier favors wide-grained Limousin oak with a medium toast. For the XO, the blend draws on eaux-de-vie from the Grande Champagne, Petite Champagne, and Fins Bois crus, aged for up to 25 years before blending, and it is bottled at 40% ABV. Pour it neat in a tulip glass and give it a few minutes to open, or serve it alongside dark chocolate or a cigar after dinner.
