Mal Bien Madrecuixe Mezcal Felipe + Ageo Cortés
Mal Bien bottles mezcal from individual traditional producers in Oaxaca and puts the makers' names on the label, and this one comes from Felipe and Ageo Cortés, a father and son who are the third and fourth generations of their family to make mezcal, working in Mengoli de Morelos in the Miahuatlán district. Miahuatlán is famous for its abundance of Agave karwinskii, and this bottling is made from madrecuixe, the tall, columnar karwinskii subspecies that grows wild across the region's hillsides. The Cortés family cooks the piñas in an underground pit for eight to ten days over a mix of encino, yegareche, mesquite and palo de águila wood, crushes them with an ox-drawn tahona immediately after cooking, and ferments the mash in open-air tinas for three to eight days. Distillation is a double run through a copper refrescadera still. Reviewers of earlier batches have described a fruity, floral, woody and spicy profile, with jelly beans, papaya, cherry, grapefruit and minerality, and one compared it to a flower-flavored Jolly Rancher with a touch of encino smoke. Batches are small, so expect each run to differ slightly. Serve it neat at room temperature.
