Mata Hari Absinthe is a 750ml, 60% ABV Bohemian-style absinthe from Austria, named for the infamous dancer and spy. It is made with grande wormwood and a blend of botanicals in the Central European style, which uses less anise than French absinthe for a lighter, more herbal character.
Emerald green in the glass, it opens herbal and slightly floral with faint anise, louches to a soft opalescence with water, and delivers anise sweetness, earthy wormwood bitterness and fennel with a velvety texture and a long, complex finish. Serve it with the traditional water drip or the Bohemian flaming sugar ritual.
