Mathilde Crème de Cassis de la Saintonge is the blackcurrant liqueur from Maison Ferrand, the Cognac house behind Pierre Ferrand, Plantation rum, and Pierre Ferrand Dry Curaçao, made at Château de Bonbonnet in the Cognac region and named for the Saintonge countryside around it. The fruit leads with Noir de Bourgogne, the variety French growers rate as the most aromatic blackcurrant there is, and the berries go through a long maceration in spirit rather than a quick flavoring pass, so the liqueur tastes like the fruit instead of candy. It's bottled at 16% ABV (32 proof), light enough that it never turns cloying. Expect deep, very ripe dark-berry aromas with a molasses undertone, a palate that's both sweet and tart with blackcurrant, raisin, and prune, and a long finish that stays fruity with a tart edge.
