Mathilde Framboise Raspberry Liqueur
Mathilde Framboise is the raspberry liqueur from Maison Ferrand, the Cognac house behind Pierre Ferrand, Plantation rum, and Pierre Ferrand Dry Curaçao, made at Château de Bonbonnet in the Cognac region. Ferrand builds it from three raspberry varieties, each doing a different job: Lloyd George, a Scottish variety, for its vivid color, and Rose de Plombières and Violette de Boux from Burgundy for their intense aromatics. The berries are pressed into a purée and macerated in the spirit base, and the liqueur is bottled at 18% ABV (36 proof). On the nose it's warm raspberry compote and just-picked berry with a floral lift; the palate opens soft, builds into concentrated raspberry-jam richness, and is held in balance by real fruit acidity rather than sugar alone, with a long, gently warming finish and a raspberry-coulis fade. The classic move is a French Martini with vodka and pineapple juice, where it outclasses the usual Chambord, and it's just as good floated into Champagne or sparkling wine, swapped into a Bramble with gin, or poured over crushed ice as a digestif.
