The Matsui Sakura Cask is a Japanese single malt from the Kurayoshi distillery in Tottori prefecture, in the foothills of Mount Daisen. The distillery sits in an area where the temperature swings sharply from season to season, and natural spring water from Mount Daisen goes into the whisky. What sets this bottling apart is the cask: it's matured in sakura, or cherry wood, casks, an unusual choice that gives the malt a distinctly floral, fruity character. It's bottled at 48% ABV in a 700ml bottle, and the label reproduces a woodblock print by Kikukawa Eizan titled Beauty in the Cherry Blossom Garden. Tasting notes published by retailers describe almond, faint fresh orange and melon, and a sawdust spiciness on the nose, then baking spices and citrus on the palate with spring blossom notes emerging, finishing with white pepper heat and vanilla sponge cake. The profile is gently rich and sweet with no smoke. Sip it neat or with a drop of water, or try it in a highball to let the cherry wood come through.
