Single pot still Irish whiskey requires a mash of both malted and unmalted barley — a tradition born from an 18th-century tax dodge on malt — and McKenzie follows the template with a genuinely local twist: 80% malted barley, 15% unmalted barley, and 5% oats, all New York-grown, mashed with water from the aquifers around Seneca Lake. Two deliberate departures from the Irish playbook define it.
