Mermaid Gin is made by the Isle of Wight Distillery, founded by Xavier Baker and Conrad Gauntlett at Rosemary Vineyard in Ryde, on the UNESCO Biosphere Reserve island off England's south coast. Ten botanicals are macerated in grain spirit for 24 hours and then distilled in a 300-litre copper column still: juniper, coriander seed, lemon zest, angelica root, liquorice root, orris root, elderflower, grains of paradise, locally grown Boadicea hops and the signature ingredient, rock samphire hand-foraged from the island's cliffs, which brings a saline, sea-air quality. Bottled at 84 proof (42% ABV), 750ml, in a striking sea-blue bottle that is fully plastic-free; the distillery is a certified B Corp and supports marine conservation. The producer describes fresh citrus, sweet spice and gentle juniper on the nose, with citrus zing, peppery spice and an earthy sweetness on the palate finishing with a hint of sea air.
