Mezcal Sababa
Mezcal Sababa is an artisanal espadín mezcal from Oaxaca, made by maestro mezcalero Francisco de los Ángeles. What sets it apart is where the agave comes from: rather than a single village, Sababa blends Agave angustifolia grown in four distinct parts of Oaxaca, Santiago Matatlán, Santa Ana del Río, San Juan del Río, and Reforma Yautepec, each contributing its own soil, altitude, and climate to the finished spirit. Blending across regions is closer to the way a Cognac house works than to typical single-village mezcal, and the goal is a balanced, consistent spirit. The agave is roasted and distilled by traditional methods, and the mezcal is bottled at 45% ABV, a strength that keeps plenty of texture and aroma. The Daily Pour describes bright citrus peel, floral notes, herbal botanicals, smoke, and sweet agave nectar, with a clean profile that makes it especially versatile in cocktails. The name comes from sababa, a slang word for awesome borrowed into Hebrew from Arabic. Sip it from a copita with orange and sal de gusano, or build a Mezcal Margarita, a Paloma, or a Mezcal Negroni around it.
