Mico Extra Añejo Tequila is the most aged expression from Mico, a Los Angeles-based tequila brand co-founded by Subir Singh, with the tequila made in Mexico under master distiller Karina Rojo. The tequila is double distilled, then taken through an aging program of roughly 44 months, well beyond the three-year minimum for the extra añejo category. It starts in ex-Kentucky bourbon barrels and finishes in Cabernet Sauvignon barrels from Jordan Winery, the Sonoma estate known for its Alexander Valley Cabernet. Mico bottles it at 42% ABV, a touch above the usual 40% for extra añejos, which gives it a little more body for sipping. The brand describes it as rich and complex, with a smooth, elegant character. Mico launched the Extra Añejo with a first release at a handful of top California retailers, including Wally's, and it sits at the top of a range that also includes an Añejo. Serve it neat in a snifter or Glencairn, or over a single large cube in a rocks glass, after dinner.
