Ned Sour Mash Australian Whisky
NED is Australian whisky made in Campbellfield, on the north side of Melbourne, with Sebastian Reaburn as master distiller, and it's built as Australia's answer to bourbon. The name is a nod to Ned Kelly, the country's most famous outlaw, and the brand leans on his bravery, flair and daring spirit. The mash bill is led by Australian corn, with wheat and barley in support, and everything is milled, brewed and distilled on site. Fermentation uses the sour mash technique familiar from Kentucky: a portion of acidic spent mash from the previous run goes into the next batch to control pH, keep bacteria in check, and hold the flavor consistent from batch to batch. The wash is then double distilled in copper pot stills, borrowing from single malt practice, and matured in 200-litre American oak barrels. It's bottled at 40% ABV. The distillery's notes describe honey, caramel, vanilla, dark chocolate and oak spice, with a good, medium-length finish. Pour it neat, over ice, or with cola, a pairing NED also sells as a ready-to-drink can.
