New Deal Distillery makes its spirits in Portland, Oregon, and Gin No. 1 is its signature gin, made in what the distillery calls the pioneering spirit of the Pacific Northwest. It starts from a wheat base spirit and is distilled on a custom-designed pot still, a deliberate choice: New Deal says the pot still allows juniper berry oils and tannins to remain as distinctive notes on the palate. The result is a juniper-forward, garden-style gin bottled at 46% ABV (92 proof), with lemon alongside the juniper in the botanical lineup. New Deal describes it as a buttery and herbaceous sipping gin that opens with citrus, moves into cracked black pepper, and finishes round, deep, dark and mellow. That weight and resinous juniper character is what makes it shine in spirit-forward drinks: it holds its own in a Negroni and makes a full-flavored Martini or Gibson. Reviewers have noted that the thick juniper and pine-resin profile can clash with the quinine in tonic water, so it's better suited to stirred cocktails, a Gimlet, or a rocks pour with a twist than to a classic gin and tonic.
