New Holland Brewing opened in Holland, Michigan in 1997, and in 2001 it launched Dragon's Milk, the bourbon-barrel-aged stout that became one of the first barrel-aged beers sold year-round. The company has been distilling almost as long, and calls itself Michigan's oldest whiskey distiller; Origin, released in 2022, is its first year-round bourbon. Where most bourbon comes off a column still, New Holland runs its mash through a hundred-year-old Prohibition-era copper pot still at its production facility. The mash bill is corn and rye with a high proportion of malted barley, a brewer's touch, and the spirit is matured in char-3 new oak barrels for a full five years, then bottled as a straight bourbon in small batches of 100 barrels or fewer at 95 proof (47.5% ABV). New Holland's own notes list stone fruit (pear and apricot), citrus, baked pastry and vanilla wafer; reviewers have pointed to the baking spice and dark chocolate that come through on the finish, and Drinkhacker called it absolutely singular among bourbons at its price. Good neat, and a natural pour next to a glass of the stout that gave it its name.
