Niulanshan is the biggest name in erguotou, the light-aroma baijiu of Beijing. The distillery sits in the town of Niulanshan north of the city, where the Shunyi County Chronicle recorded spirits production as early as 1719, and in its modern form dates to 1952, when four old Beijing distilleries, Gongli, Fushuncheng, Yixin and Kuisheng, were merged into one state-owned operation, today part of Beijing Shunxin Agriculture. It is one of the best-selling baijiu brands in the country by volume, passing ten billion yuan in annual revenue in 2019. Erguotou means "second pot head": the name refers to the cut of spirit collected on the second run of cold water through the tin condenser, the cleanest part of the distillation. Chen Niang is Niulanshan's aged blend, made from sorghum and wheat with water drawn from the Chaobai River, bottled at 52% ABV (104 proof) in this one-liter bottle. The style is clear, clean and intensely fragrant in the qingxiang tradition, with the grainy, slightly fruity aroma and firm, crisp finish that erguotou is known for. Serve it neat in small glasses at room temperature alongside hot pot, dumplings, grilled meat or anything spicy.
