Nueveuno Añejo Deep Tequila
Nueveuno is a certified organic and kosher tequila made at Rancho Miravalle, the Agaveros Unidos de Amatitán distillery, NOM 1426, in Amatitán in the Tequila Valley of Jalisco, where production is run by master distiller Nohemi Partida. The agave is 100% blue Weber grown in the Valles lowlands, cooked slowly in stone-and-brick ovens and crushed on a roller mill. Fermentation happens in open stainless steel tanks with the fibers removed and deep well water, and the wash is double distilled in a stainless pot still. The Deep series is the brand's aged line, and this Añejo spends two years in American white oak, including used bourbon barrels, before bottling at 40% ABV (80 proof). The long rest in used wood is deliberate: it lets vanilla, caramel and cinnamon from the barrel build up gradually without smothering the cooked-agave base. Tasters on Tequila Matchmaker consistently pick up cooked agave, caramel, vanilla, cinnamon and black pepper, with cherry, orange and apple fruit and a touch of mint behind them. An organic añejo with real agave presence, best sipped neat from a tulip glass or a snifter.
