Oak & Eden is a Texas whiskey company founded in 2017 by Joe and Jamie Giildenzopf and Brad Neathery, built around a patented way of finishing whiskey inside the bottle. Every bottle holds a five-inch spiral-cut piece of toasted oak, which the brand calls a spire. For Bourbon & Vine the spire is French oak that has been steeped in Cabernet Sauvignon for about four weeks before it goes into the bottle. The bourbon itself is sourced, including stock from MGP in Indiana, on a high-rye mash bill of 60% corn, 36% rye and 4% malted barley, aged two years in new American oak, and bottled at 90 proof (45% ABV). According to Oak & Eden, the spire rests in the whiskey for at least six weeks before release, by which point the wood is saturated. The wine-soaked wood gives the bourbon a dark reddish color, and Breaking Bourbon's review picks up Luxardo cherry, dark red wine and seasoned oak on the nose, a palate of plums, raisins, dark fruit and buttery caramel, and light rye spice on the finish. Pour it neat or in a Manhattan.
