OOLA Barrel Finished Gin combines the two flagship spirits of Seattle's OOLA Distillery: its 13-botanical gin, distilled from organic Washington winter wheat, rested for two to four months in a freshly emptied cask from OOLA's Waitsburg Bourbon. No sugar is added; the natural sweetness comes from the wheat mash. OOLA was founded in 2011 by Kirby Kallas-Lewis in Capitol Hill and works grain to glass with Washington ingredients.
The result is a complex, nuanced spirit where the base gin's floral rose and citrus notes, lively coriander and smoky black cardamom meet a deep, rich wood influence of vanilla and caramel from the bourbon barrel.
