Padre Azul Xiaman Artesanal Mezcal
Xiaman is the mezcal from the team behind Padre Azul tequila, Austrian-born Hans-Peter Eder and his wife Adriana Alvarez, made in San Tomás de Arriba, Oaxaca, and launched in 2019. It is an ensamble of two agaves in equal parts: Tepextate for its complex flavor, and mature Espadín for depth and rich aromas. The brand harvests only during the full moon, and the production follows the traditional artesanal method certified by the Mezcal Regulatory Council: agave cooked in an underground pit oven, then fermented and distilled the old way, bottled at 44% ABV. The bottle is as much a part of it as the liquid. Designed by artist Maurilio Rentería, each one is hand-painted and hand-labeled, and the stopper is beaded into a jaguar head by Wixárika artisans, more than thirteen hours of handwork per bottle. The name refers to a mythical figure able to travel between heaven, earth and the underworld. Padre Azul describes it as a smoky powerhouse, with the Tepextate bringing layered flavor and the mature Espadín rounding it out. A sipping mezcal and a display piece in one, best poured neat at room temperature.
