Paladar Blanco Tequila
Paladar is made at Destilería El Llano in the center of the town of Tequila, NOM 1109, the Orendain family distillery best known for Arette and run today by brothers Eduardo and Jaime Orendain, the fifth generation of the family to make tequila. The brand calls the Orendains one of the last independent founding families of tequila, and the agave comes from the family's own fields: blue Weber agave grown around seven years before harvest. The piñas are slow-cooked in brick ovens, fermented open-air in pine boxes using a mix of the house's proprietary yeast and wild yeast, then distilled twice in an alambique pot still that combines copper and stainless steel. The blanco rests in stainless steel rather than wood, so nothing stands between the cooked agave and the glass, and it's bottled at 40% ABV (80 proof). Paladar markets the line as additive-free, and as a finishing touch each bottle is hand-dipped in volcanic soil taken from the agave fields. It's the base of the range and the cleanest look at the El Llano house style, built for a Paloma, a Margarita, or a neat pour next to the reposado.
