Paladar Reposado Tempranillo Cask Tequila

Paladar is the newer project of the Orendain family, the people behind Arette and one of the last independent founding families still making tequila in the town of Tequila, Jalisco, with Eduardo Orendain Jr. as master distiller. The agave is seven-year blue Weber from the family's own fields, slow-cooked in brick ovens, fermented with a proprietary and wild yeast blend in open-air pine boxes, and twice distilled through copper and stainless alembic stills. Every bottle is hand-dipped in the volcanic soil of the agave fields. The Tempranillo Cask is part of Paladar's wine-finished reposado series: the reposado is first rested in oak, then finished in American oak barrels that previously held Tempranillo, Spain's great red wine grape, and bottled at 40% ABV. The wine cask brings soft red fruit, a hint of tannin structure, and a gentle dryness that sits under the reposado's vanilla and caramel without pushing the agave out of the picture. An unusual, elegant reposado for sipping neat or over one large cube.
