Paladar Reposado Tequila
Paladar Reposado comes from Destilería El Llano, NOM 1109, the Orendain family distillery in the middle of the town of Tequila, where the same family makes Arette; brothers Eduardo and Jaime Orendain, the fifth generation, run it now. Paladar describes the Orendains as one of the last independent founding families of tequila, and the blue Weber agave comes from their own fields near town, grown about seven years before it's harvested. Production is old-school Tequila Valley: the agave is cooked in brick ovens, milled, fermented open-air in pine-wood tanks with a blend of proprietary and wild yeast, and distilled twice in a stainless pot still with a copper coil. For the reposado, that spirit is rested four months in ex-bourbon American white oak barrels, long enough to round the edges and add some vanilla from the wood while keeping the cooked agave in front, then bottled at 40% ABV (80 proof). Like the rest of the range it's sold as additive-free, and every bottle is hand-dipped in volcanic soil from the agave fields. A lightly rested pour that works neat or in an upgraded Margarita.
