Description: Pasubio is a unique amaro that captures the flavors of the Dolomite Mountains in the Trentino region of Italy. Its rich, aged wine base is enhanced by notes of blueberries, pine, and smoke, as well as bitter alpine herbs. It is uncommon for amari to include mountain berries, making Pasubio particularly distinctive. The mugo pine (pinus mugo), which grows on rocky, high-altitude slopes, is a key ingredient in the liqueur. Its buds and young cones are harvested from the wild in the spring and allowed to dry in the sun over the summer and fall. Like many alpine plants, the mugo pine has a long history as both a medicinal herb and a flavoring for amari, eau-de-vie, and liqueur. Its inclusion in Amaro Pasubio helps to create a flavor profile that is evocative of the region.
