Patsch 7 Year Extra Anejo Tequila
Patsch is an ultra-premium tequila brand co-owned by Martin Schapira and produced at Destilería Las Américas in Jalisco, NOM 1480, a distillery known for organic, additive-free tequila. The brand's whole pitch is patience: fully ripe blue Weber agave grown in organic soil without chemicals, cooked slowly in stone ovens and double distilled, in a process Patsch describes as organic from start to finish. The extra añejo category only requires three years in wood; this one is aged a full seven years in oak before bottling at 40% ABV (80 proof), more than twice the minimum. The producer describes a rich amber color and an aroma of oak, vanilla and caramel with hints of citrus and spice, then chocolate, dried fruit and toasted nuts on the palate and a velvety, long finish. Paste Magazine's review found red fruit like strawberry and raspberry alongside toasted oak, coconut and cocoa on the nose, and a palate of dark fruit, anise-like spice and a vinous quality that builds into cocoa and toffee. This is a bottle for slow sipping from a snifter or copita, the way you'd treat an old Cognac.
