Patsch Anejo Tequila
Patsch is an ultra-premium tequila co-owned by Martin Schapira and made at Destilería Las Américas in Jalisco, NOM 1480, a distillery known for organic and additive-free tequila. Every Patsch starts with fully ripe, sustainably grown blue Weber agave from organic soil farmed without chemicals. The piñas are cooked in brick ovens and double distilled, and the brand stresses that the entire process is organic from field to bottle. For the añejo, the tequila is aged 18 months in American oak whiskey barrels, half a year past the legal minimum for the category, and bottled at 40% ABV (80 proof). Patsch's own notes call it a deep, rich gold with blond highlights and long legs, with a nose of ripe pear, baked green apple and a hint of licorice root over dense wood tones of toffee, leather and clove and a heady note of baked, caramelized agave. The body is described as evenly lush, with spicy nutmeg wrapping the palate before the flavors echo the bouquet. It sits in the middle of the Patsch range, between the reposado and the seven-year extra añejo, and is best enjoyed neat or with a single large cube.
