Patsch Blanco Tequila
Patsch is an ultra-premium tequila co-owned by Martin Schapira and produced at Destilería Las Américas in Jalisco, NOM 1480, a distillery widely respected for organic, additive-free tequila. Co-owner Schapira has said the brand wanted to compete on what's in the bottle rather than on gimmicky packaging, and the process reflects that: only fully ripe blue Weber agave, grown in organic soil with no chemicals, cooked slowly in stone ovens and double distilled, in a production Patsch describes as organic from start to finish. The blanco sees no barrel time; instead it goes through the brand's own filtration and oxygenation step before bottling at 40% ABV (80 proof). Paste Magazine's review picked up fresh cracked pepper, grapefruit and lightly cooked agave on the nose, with herbal notes and candied citrus following, and described the palate as dry and elegant with the alcohol well muted. It's the purest look at the Las Américas spirit in the Patsch lineup and the base the reposado, añejo and seven-year extra añejo are built from.
