Penelope Rio Bourbon Whiskey
Penelope Bourbon was founded in 2018 in Rumson, New Jersey by Mike Paladini and master blender Danny Polise, sourcing its whiskey from MGP in Lawrenceburg, Indiana, which acquired the brand in 2023. Rio is the most sought-after bottle in the Cooper Series, the annual run of finished releases named for Polise's son, and it comes out once a year each March in a limited allocation. The base is Penelope's four-grain straight bourbon, a blend of three MGP mash bills that works out to 74% corn, 16% wheat, 7% rye and 3% malted barley. It then gets a double finish: first in American honey casks, barrels that previously held honey, then in casks made of Amburana, the Brazilian hardwood that gives Rio its name and a flavor that reads like cinnamon roll and gingerbread, before bottling at 98 proof (49% ABV). Penelope's own notes are sweet honey and cinnamon roll on the nose, a rich palate of gingerbread, honey and baking spice, and a savory finish with lingering honey and spice. Polise calls it one of the more complex finishes the company makes. Drink it neat or in a honey-sweetened Old Fashioned.
