Penelope Rose Cask Finish Bourbon Whiskey
Penelope Bourbon was founded in 2018 in Rumson, New Jersey by Mike Paladini and master blender Danny Polise, and sources its whiskey from MGP in Lawrenceburg, Indiana, which bought the brand in 2023. Rosé Cask Finish was Penelope's third expression and the first in what became the Cooper Series of finished releases, launched in October 2020 as a run of just 2,400 bottles and now returned in numbered batches each year. The base is Penelope's signature four-grain straight bourbon, a blend of three MGP mash bills that works out to 74% corn, 16% wheat, 7% rye and 3% malted barley. It is then finished in hand-selected French wine casks that held 100% Grenache rosé from the Southern Rhône, one of the first bourbons finished in rosé wine casks, and bottled at 94 proof (47% ABV). Paladini chose Grenache because its sweetness complemented the soft, wheat-forward four-grain blend, and the result is lighter and more delicate than the brand's barrel-strength bottlings, with candied fruit, caramel and vanilla from the wine and the wood. Penelope suggests it at room temperature or chilled like a glass of rosé, and it makes an easy summer pour over a large cube.
