Penelope Tokaji Cask Finish Bourbon Whiskey
Penelope Bourbon was founded in 2018 in Rumson, New Jersey by Mike Paladini and master blender Danny Polise, and sources its whiskey from MGP in Lawrenceburg, Indiana, which acquired the brand in 2023. Tokaji Cask Finish is the third release in the Cooper Series, the annual run of finished whiskeys named for Polise's son, and unlike the rest of the Penelope lineup it is built on rye rather than bourbon: the base is MGP's straight rye, a two-grain mash bill of 95% rye and 5% malted barley, aged six years in the first release and eight years and older in the ones that followed. The finish is in casks that held Tokaji, the late-harvest and botrytized sweet wine of Hungary, chosen to layer apricot, honey and dried-fruit sweetness over the rye's pepper and mint. It is bottled at a high strength that varies by release, printed on the label, and comes out each February in a limited allocation of around 1,900 six-packs. Penelope describes it as rich and decadent, capturing the late-harvest notes of the wine. A dessert-leaning rye for sipping neat, or for a Manhattan with the vermouth dialed back.
