Perro de San Juan is a mezcal brand produced in San Dionisio Ocotepec, in the Tlacolula valley of Oaxaca, one of the great mezcal villages of the Valles Centrales. The base is espadín agave cooked in an earthen pit oven, crushed the traditional way, fermented naturally with native wild yeasts and double distilled in copper stills, and the brand's three labels are each a different take on that spirit. Cochinilla, the red label, is an abocado, a mezcal that has been infused after distillation, and in this case the ingredient is grana cochinilla, the cochineal insect that lives on nopal cactus and has been harvested in Oaxaca since pre-Hispanic times for its crimson dye. The label shows the cochineal forming on the nopal, and the infusion gives the mezcal a tint and a faint earthy edge without covering the espadín underneath. Published notes describe vanilla, pear, citrus, rose petal, mint, anise and cinnamon over mineral smoke on the nose, then ripe banana, smoked agave, cut grass, peppercorn and brine on the palate, finishing grassy with a touch of mint and soft smoke. Sip it neat with orange and sal de gusano.
