Plantation Australia 2007 is a One-Time Limited Edition from Maison Ferrand, and one of the few bottlings to bring Australian rum to the American market under a major label. It was distilled in 2007 at Beenleigh, the Queensland distillery whose history goes back to 1884, from Queensland molasses fermented for 14 days with two yeast strains, Schizosaccharomyces pombe and Saccharomyces cerevisiae, and run through pot stills. The rum then spent roughly 13 years in ex-bourbon barrels in Queensland's tropical climate before Alexandre Gabriel moved it to France for a final year in ex-Cognac casks, for 14 years in total. It is bottled unsweetened, with no dosage, at 49.3% ABV (98.6 proof), with Australian flora and fauna on the label. The producer's notes lead with peach, apricot and nectarine, crème brûlée, coconut and a floral touch of iris and lilac on the nose; the palate pairs that stone fruit with vanilla from the bourbon wood, compote-style apple and quince, and milk chocolate; the finish runs long on peach, ripe mango, vanilla and spice. Beenleigh rum of this age rarely leaves Australia, and this release was made once and not repeated.
