Porfidio 5 Year Old Extra Anejo Tequila
Porfidio 5 Year Old Extra Añejo, sold as The Maximus, is the longest-aged release from Porfidio, the brand Austrian-born Martin Grassl launched in 1991 after coming to Mexico at 24 to study the tequila market and deciding to make his own. Grassl built Porfidio on 100% agave, triple distillation and no additives, and the bottle became a cult object for the hand-blown green glass saguaro sealed inside it, each one with red fruit details on the arms. The tequila is made from 100% blue agave grown in Jalisco, cold-pressed and enzymatically hydrolyzed rather than cooked in the conventional way, a process the producer says cuts the methanol content to less than half that of a standard tequila, then distilled on German Holstein stills. It is aged five years in hand-toasted virgin oak barrels, with part of the maturation spent at sea in the producer's ocean-matured program, and bottled without additives in a 750ml glass cactus bottle. The producer describes the result as golden, rich and complex, and the five-year rest puts it among the oldest extra añejos on the shelf. A sipping tequila and a display piece for the bar.
