Primo 1861 Blanco is made at El Pandillo, NOM 1579, the Jesús María distillery in the southern Los Altos highlands of Jalisco, and one of the most respected producers of traditional, additive-free tequila. The production is the full old-school method: blue Weber agave from the highlands is slow-cooked in stone and brick ovens, crushed under a tahona stone wheel, fermented open-air in wood pipones and stainless tanks without the fibers, and double distilled in a copper pot still. It is bottled at 43% ABV (86 proof), a touch above the usual 40%, which lets more of the raw agave through. VinePair gave it 94 points and named it to its Top 50 for 2023, describing intense aromatic notes of fruit and pepper over an underlying subtle sweetness; tasters on Tequila Matchmaker consistently log cooked agave, minerals, citrus, black pepper and earth on the nose, with cooked agave, black pepper, citrus and minerality on the palate and a peppery finish. It is a blanco for drinking neat or in a Margarita or Paloma, where the mineral, agave-heavy character stands up to lime.
