Probitas Blended Dark Rum

Probitas Blended Dark Rum, the green-label release, is the second expression from the Foursquare and Hampden collaboration (sold as Veritas outside the United States), blended by Richard Seale at Foursquare Rum Distillery in Saint Philip, Barbados, from rum distilled at Foursquare and at Hampden Estate in Trelawny, Jamaica. Where the original white Probitas is a 47% daiquiri rum built on Foursquare column rum with a dose of Hampden pot still, the green label is built for dark-rum drinks and bottled at 57% ABV (114 proof). The blend brings together unaged double-retort pot still rum from Hampden, unaged twin-column Coffey still and double-retort pot still rum from Foursquare, and two-year-aged Foursquare pot still rum, with color from a caramel Seale makes at the distillery by superheating sugar until no sweetness remains; no sugar is added, and the rum is distilled, matured, blended, and bottled in the Caribbean. Rich molasses character and the high proof hold up through dilution, which is the point: Painkillers, Planter's Punch, Mai Tais, Old Fashioneds, Sazeracs, and tropical drinks where a standard 80-proof dark rum disappears.
