Proof & Wood Good Day 21 Year Old Canadian Whiskey
Good Day is Proof and Wood's 21-year-old Canadian whisky, sourced, blended, finished, and bottled by Dave Schmier's Bardstown, Kentucky independent bottler, which has built its reputation on buying old stocks of whiskey and releasing them in small, numbered runs. The whisky was distilled in 2000 at an undisclosed Canadian distillery from a mash of 97% corn, 2.7% rye, and 0.3% malted barley, the corn-heavy recipe typical of Canadian base whisky, and spent 21 years in barrel before Proof and Wood selected eight barrels, blended them, and finished the blend for three weeks in ex-American rye whiskey barrels for a little extra spice. It was bottled at 52% ABV (104 proof) in a run of 1,608 bottles. Skurnik's notes call out green spice, honey, and vanilla on the nose with caramel, citrus, and dried fruit on the palate; Whisky Advocate rated it 90 points in 2022 and found fresh-cut grass, jasmine, and orange blossom, with water pulling out chocolate-covered cherries, dark-roast coffee, hot fudge, and coconut water, and a long dark chocolate and espresso finish. A rare shot at well-aged Canadian whisky at a serious proof rather than the usual 80.
