Made at Midleton Distillery from a mash of malted and unmalted barley and triple distilled in copper pot stills, it is composed entirely of single pot still whiskeys matured for no less than fifteen years in a careful balance of first-fill and refill bourbon and sherry casks, and bottled at 46% ABV (92 proof) without chill filtration.
The mix of first-fill and refill wood accentuates the spice within Redbreast's full, complex character: ripe orchard fruit, dried fruit and nuts on the nose, a rich palate of toffee, vanilla, clove and pepper with the oily texture of pot still whiskey, and a long finish that turns gently drying. It is a whiskey for slow neat sipping.
