Scrappy's Bitters Lime
Scrappy's Bitters was started in Seattle in 2008 by bartender Miles "Scrappy" Thomas, who, with only Angostura and Peychaud's on the market, rented a commissary kitchen under an Italian restaurant and made his own until neighborhood bartenders started placing orders. It was the first craft bitters company in North America, and everything is still handmade in small batches in Seattle from organic ingredients, with no artificial flavors, chemicals, or dyes. Lime is made with fresh, hand-zested organic lime peel and a blend of herbs and spices, giving a zesty, vibrant citrus essence with a slightly spiced edge and a clean, persistent aroma, bottled at 49.1% ABV in a 5 oz (148 ml) dasher bottle. Thomas built it around the idea that fresh lime is the forgotten element in a lot of drinks, and it shows in gin and vodka cocktails especially; the house recipe, the Frog Leg, is two ounces of rye, half an ounce of Cynar, a quarter ounce of amaro, half an ounce of dry vermouth, and three or four dashes of the bitters, with a few more dashes floated on top. It also lifts a Daiquiri or a Gin & Tonic.
