Se Busca Maguey Madrecuishe Joven Mezcal
Se Busca is made at the Lopez Sosa family palenque in San Juan del Río, Oaxaca, where the family has been producing mezcal for generations, with maestros mezcaleros Rodolfo and Mary Lopez Sosa at the helm, Doña Mary and Doña Yuri running fermentation, and a house chemist, Diana, signing off on every batch. This bottling is 100% wild-harvested madrecuishe, a slender agave of the karwinskii family that takes around twelve years to mature, and the brand plants two agaves for every wild one it cuts. The piñas are roasted in an earthen pit, crushed with a tahona stone, fermented, and double distilled in traditional copper pot stills, then bottled unaged as a joven at 40% ABV (80 proof) in small, limited batches. The producer's notes describe white pepper, wet hay, Cerignola olives, and ripe tropical fruit on the nose; acacia honey, black plantain, candied ginger, grilled pineapple, charred serrano, Malabar peppercorn, Thai basil, and faint smoke on the palate; and a medium-long finish of pickled jalapeño, braised celery, Aleppo chile, and lingering smoke. The brand recommends it neat with a slice of orange.
