Siempre Plata Tequila
Siempre Tequila was started with about $9,000 by Alex Lacroix and Monica Sanita-Ramirez, whose grandmother and great-grandmother made mezcal, and launched its plata in 2015 from NOM 1438 in Tequila. In 2024 the brand moved production to Viva Mexico, NOM 1414, in Arandas in Los Altos, owned by the Vivanco family, agave farmers with more than a dozen highland estates, under master distiller Sergio Cruz. Estate agave is cooked in stone and brick ovens, roller-milled, fermented in stainless tanks with rum and champagne yeasts (and classical music, the brand's Mozart Method), and double distilled in copper pots, with every expression at 40% ABV (80 proof). The Plata is the unaged bottling and the one that built the brand, with a Platinum medal from the International SIP Awards for the current liquid. The producer's notes describe spice, herb, pepper, brine, and citrus up front, with candied and floral notes, cooked agave, and sweet fruit behind, and that peppery, briny, highland profile is what makes it worth sipping neat as well as using in a top-shelf Margarita or Paloma.
