Silent Pool Gin
Silent Pool Gin is distilled on the Albury Estate at the foot of the Surrey Hills in England, beside the spring-fed lake that gives it its name, by Silent Pool Distillers, founded in 2015. Its 24 botanicals go in through three routes: maceration in the base spirit, a "gin tea" infusion and a basket during distillation. Bosnian and Macedonian juniper, coriander, lavender, chamomile, rose petals, fresh citrus, cassia and cubeb are lifted by local honey for a smooth finish, and it is bottled at 43% ABV (86 proof) in a striking teal bottle.
Drinkhacker rated it an A (9.5/10), describing bright pine, lavender and oily lemon peel on the nose, juniper and black pepper leading the palate followed by lemon, lavender and chamomile with earthy depth and gentle honey sweetness, and called it "a bold but well-integrated gin" that excels in a G&T. Serve it with tonic and an orange peel, as the distillery suggests, or in an elegant Martini.
