Single Cask Nation is the American independent bottler best known for single-cask Scotch, and this is one of its rum selections: a single cask from DARSA (Destiladora de Alcoholes y Rones S.A.), a Guatemalan molasses distillery that rarely appears under its own name on a label. The rum was distilled from molasses in June 2011, aged for more than eleven years in Guatemala in a second-fill bourbon hogshead, cask number 14, and bottled in October 2022 at cask strength, 56.6% ABV (113.2 proof), non-chill filtered, with no color added, in an outturn of just 230 bottles of 750 ml. Single Cask Nation's own notes describe green apple, guava paste, black licorice, and sea salt on the nose; dark chocolate fudge with leather and oak on the palate; and a long finish that hints at barbecued pineapple, which the bottlers sum up as a bright sunny day with an afternoon thunderstorm that resolves into a sunset. Guatemalan rum at full proof and without the usual sweetening is a rare thing, and this is a bottle for drinking neat with a drop of water.
